Risotto

Last night, I imagine we were the only people in all of Mongolia eating risotto.

In February our friend Jenn, an excellent cook and nutritionist, sent us two boxes full of healthy food. One box arrived in early March, and we feasted on blue corn pancakes. The other box finally arrived in mid-May, and this time we got all kinds of special rice. Red rice from Bhutan. Black rice from China. Kalijra rice from India.

I wanted to try something beyond boiled rice and I checked the company’s web site and found some recipes. And there were even a few that we could make here. So Risotto with Pancetta and Cabbage turned in to Risotto with Bacon and Cabbage. But it was still delicious.
